Chef Libby Towns Hoats is the owner of Libby’s Personal Chef Service. She is a 3rd generation native Brevard County Floridian. Her grandmother Bobbi Towns, owner of Towns Seafood in Stuart, Florida, in the 1970s, was her idol and inspiration. Her Grandmother was born in New Orleans and raised in Texas. It is no wonder Chef Libby prides herself on her specialty of Southern Cajun Fusion Cuisine.

Chef Libby, of Libby’s Personal Chef Service, has over twenty years experience in the food service industry. She attended Johnson and Wales University in Charleston, SC and graduated in 2001 with an A.S. Degree in Culinary Arts and an A.S. Degree in Baking and Pastry Arts. Chef Libby completed her internship at the famous Brown Palace Hotel in downtown Denver, CO. Currently, Chef Libby is a member in good standing of the United States Personal Chef Association.

Chef Libby is also a well-known saucier and former owner of Small Town Sauce Company located in Brevard County, FL. Small Town Sauce Company is famous for 14 different sauces and is most well-known for Raspberry Fire BBQ sauce, Garlic Fury BBQ sauce, and 100 Proof sweet “anything” sauce and marinade.

Chef Libby’s first real cooking job came at the age of 15 at the Tico Airport Café, in Titusville, Florida. Being a waitress was just not enough. Dying to get on the line, Chef Libby finally did. She learned how to make her first real Monte Cristo Sandwich. At the time, she was in heaven. Never did she know that the Monte Cristo would turn into her attending Culinary School at Johnson and Wales University. Chef Libby’s education resulted in her getting to work on famous Market Street and at The Brown Palace Hotel in Downtown Denver. Goodbye Monte Cristo. Hello, Crawfish Etouffee and grits and Cedar Plank Salmon with Balsamic Reduction.

Through many years of trial and error and the love of food and trying new things, Chef Libby Towns is excited to try a new adventure being your very own personal chef. Food is not just her passion, it is WHO she is, and she is excited to start this journey with you! So, let’s starting COOKING!
